We discovered a fun new treat this week: Mini watermelon cucumbers from Melissa’s Produce. Just like the name promises, they look like miniature watermelon, but the taste is definitely cucumber. These little cuties, an heirloom variety that is native to Mexico and South America, are each about the size of a quarter.
One of the best ways to eat mini watermelon cucumbers is to pop them in your mouth, one after the other. But if you’re looking for a twist on your usual salad, they’re the perfect crunchy addition. So – in an effort to make lunchtime just a little bit cuter – we sliced them into a special salad with heirloom tomatoes. Delicious!

Mini Watermelon Cucumber Tomato Salad
A super-quick summer salad made with bite-sized mini watermelon cucumbers.
Ingredients
- 2 large heirloom tomatoes
- 15 to 20 mini watermelon cucumbers
- 1/4 cup extra virgin olive oil
- 2 ounces feta cheese, crumbled
- salt and pepper to taste
Instructions

Dice the tomatoes and slice the cucumbers; combine in a medium bowl. Toss with olive oil. Sprinkle crumbled feta cheese on top, add salt and pepper to taste.
This salad is a great side dish for a summer meal. It can also make a delicious and refreshing snack on those hot summer afternoons.
These cucumbers are available in the late summer and early fall. Look for them in your produce department or ask your produce manager about availability.
