Italian Sausage and Peppers

4 large sweet Italian sausages (preferably from your local butcher; don’t bother with the cheap grocery store brand)

2 T. olive oil

1 large yellow onion, diced

2 red bell peppers, diced

3 cups Homemade Tomato Sauce

Salt and pepper to taste

Heat a grill to medium-high heat and place the sausages on the grill. Grill them until they are nice and evenly browned all around, about 10 minutes. Slice the sausages into thick slices and set aside. In a large saucepan, heat the olive oil over medium heat. Place the onions and peppers in the pan, reduce the heat to low, and saute, stirring gently, for 15 minutes, making sure the heat does not get too high. The onions and peppers should be soft and just very light brown, not crispy. Add the tomato sauce and the sausages to the pan, bring the liquid to a boil, and then simmer on very low heat for one hour so that the flavors have a chance to combine.  Season with salt and pepper to taste. Serve immediately over cooked pasta. Serves 4.
