Spinach Frosting

1 cup spinach, steamed and drained

1/2 cup butter, softened

3 cups powdered sugar

1 tsp. vanilla

Drain the spinach (it should be a small amount, about 2 ounces) and puree it in a food processor until smooth. Let it cool. Meanwhile, in a mixing bowl, combine the butter and sugar and vanilla until creamy (add more sugar if necessary to achieve desired texture). Add spinach puree; mix until thoroughly combined. Frosts 1 large cake or 3 dozen cookies.
